PINEAPPLE PORI / PINEAPPLE PAZHAMPORI / PINEAPPLE FRITTERS

Pazham pori (ethakka appam) is a popular and an all time favourite snack of malayalees. Usually ripe bananas dipped in maida batter and deep fried to a golden brown color. But I am using wheat flour instead of maida because maida is very harmful to our health and digestive system.

   Here I am preparing this special snack with ripen pineapple and wheat flour. It is very easy to prepare pineapple pori like pazham pori  with very minimal ingredients and here is the recipe for the tea time snack pineapple pazhampori.


PINEAPPLE FRITTER


INGREDIENTS

Pineapple - 1
Wheat flour - 1 cup
Sugar - 3 teapoon
Salt - as required
Cumin seed - 1 pinch
Turmeric powder - 1/4 teaspoon
Cooking oil - for deep frying


METHOD


   Peel off the skin of pineapple and cut it into round shape pieces. Take wheat flour, sugar, turmeric powder, salt and cumin seeds in a bowl. Blend it nicely by adding enough water to get a thick batter. Dip pineapple pieces in the prepared batter and evenly coat them. Heat oil in a heavy bottomed pan. When it is boiled, deep fry the batter coated pineapple pieces by turning both sides till golden brown. Take it out and put on tissue paper to drain the excess oil.


   Now the tasty Pineapple pazhampori is ready. Serve hot with tea and enjoy the special taste...

MUTTA BAJJI / EGG BAJJI

   Today I am adding a tea time snack recipe which I like very much because I like egg a lot. Bajji is an Indian fried food made from various flours and ingredients. Here I made this with gram flour batter and boiled egg. See the recipe below:


EGG BAJJI


INGREDIENTS


Egg - 3
Gram flour - 300 g
Chilli powder - 1 teaspoon
Turmeric powder - 2 pinch
Asafoetida powder - 1/4 teaspoon
Baking powder - 1 pinch
Salt - to taste
Cooking oil - as required


PREPARATION


   Boil egg in water and de - shell it and keep aside. Combine gram powder, chilli powder, asafoetida powder, turmeric powder, salt and baking powder and make a smooth batter by adding some water. The batter should be thick as idly batter. Keep this batter for 10 minutes.

   Heat oil in a pan. Split boiled egg into two. Dip egg pieces into the batter and deep fry in oil. Fry both the sides and serve with tomato sauce.



STEP BY STEP METHOD

1. Combine gram flour, chilli powder, salt, asafoetida, turmeric powder, baking powder and water to make a thick and smooth batter. Keep this for 10 minutes.


2 Boil egg and remove the shell. Cut it into two.



3. Dip egg pieces into the batter and fry them in boiled oil. Enjoy it with tomato sauce.

CHAKKAPPAZHAM ELA ADA / JACKFRUIT RICE PARCELS IN PLANTAIN LEAF

Jack fruit is known as the jack of all fruits. It contains a huge amount of nutrients such as vitamines, minerals, carbohydrates, fibre and protein. Jackfruit is a good source of calorie, but contains no cholesterol or saturated fats. It prevents  cancer, and helps us to improve immunity power. Today I am adding Chakkappazham Ada recipe for you.


   Ada is a traditional delicacy of Kerala. Chakkappazham Ada consisting of rice parcels encased in a dough made of rice flour, with sweet jackfruit jaggery coconut mix fillings, steamed in plantain leaves. Some people use sauteed jackfruit with jaggery and grated coconut for filling. But I used chopped jackfruit for this ada. It can be served as an evening snack as well as a breakfast item.


CHAKKAPPAZHAM ADA / JACKFRUIT ADA

INGREDIENTS

Rice flour -1 cup
Warm water - as required
Plantain leaves - as required
Salt - to taste

FOR FILLING

Ripe Jack fruit - 1 cup (chopped)
Jaggery - as required
Coconut (grated) - 1 cup

PREPARATION


   Mix rice flour with warm water and salt to make a smooth dough. (slightly looser than chapathi dough) Mix chopped jackfruit, jaggery and grated coconut and keep aside. Cut plantain leaves into 8-9 inch squares. Take some dough and pat it over the plantain leaves thinly with fingers. Then put the jackfruit mix inside it and fold. Make all adas like this. Put idly cooker or steamer on the flame and pour some water and allow it to boil. Place folded adas inside it and steam for 15 - 20 minutes or until it get cooked. Take out adas and serve with or without plantain leaves.

   Jackfruit elayappam is ready. Enjoy....

VAZHAKOOMPU VADA / BANANA FLOWER FRITTER

Vazhakkoompu has a lot of health benefits and we used to make it as thoran commonly. But banana flower is good for making vada and now I am adding this healthy recipe for you. Kids also will like this. Preparing any dish with vazhakkoompu is very difficult, but it is fibrous and good for kidney functioning and all. So don't throw away vazhakkompu and make variety dishes from that.


VAZHAKKOOMPU VADA


INGREDIENTS


Vazhakkoompu / Banana Flower - 1
Shallots - 10 (chopped)
Green chillies - 3 (chopped)
Red chilli powder - 1/4 teaspoon
Basan (kadalamavu ) - 3 tablespoon
Curry leaves - 2 springs (chopped)
Garam masala - 1/2 teaspoon
Ginger - 1 piece (chopped)
Garlic (crushed) - 3
Turmeric powder - 1/4 teaspoon
Salt - to taste
Cooking oil - as required


METHOD

Take banana flower and chop it well. (take out each florets and remove the hard and long stigma ( kallanum kalliyum of vazhakoompu in malayalam) while chopping). Dip chopped banana flower in saline water or rub it with coconut oil to avoid changing the color.Cook this with some water, salt and turmeric powder. Drain excess water and press it to get dry. Add all the chopped ingredients, basan  and powders with cooked banana flower and mix well. The dough for vada (fritter) is ready.

   Now make small balls from dough and flatten it as vada. Make all dough like this and deep fry in hot oil. (We can shallow fry them instead fry cooking,  to reduce the use of oil). Now the Vazhakkoompu Vada / Banana flower fritter is ready to serve. Serve hot with tomato sauce.

CHAKKA VARUTHATHU / CHAKKA UPPERI /JACK FRUIT CHIPS

Friends, Do you like jackfruit chips? I like it very much. Please don't buy chips from shops, because a lot of studies revealing that the cause of most of our new generation diseases is our wrong way of food habits. In most of the shops, they used the same oil for frying chips and snacks again and again. This is very harmful to our health.



JACKFRUIT  CHIPS / CHAKKA VARUTHATHU

It is very easy to prepare jackfruit chips. See the recipe below:


INGREDIENTS


Jack fruit - 1
Cooking oil - as required
Turmeric powder - 1/4 teaspoon (if needed)
Salt - as required


METHOD


   Clean and remove the seeds from jack fruit and cut it in lengthwise (flat shaped) and keep aside. Heat oil in a heavy bottomed pan and allow it to boil. Put jackfruit pieces to the boiled oil carefully. Stir occasionally after 2 minutes. Add turmeric powder to the oil if needed. ( I didn't use turmeric powder). Dissolve some salt into 1 teaspoon water. When chips getting  ready, pour the saline water over the oil. Stir well for one minute more. Now the tasty jack fruit chips is ready. Remove it from oil and put it on tissue paper. Serve and enjoy with tea or coffee.

MOONG CHAAT / GREEN GRAM POMEGRANATE SALAD

    Green gram is one of the best vegetarian super foods with amazing health benefits. It is also known as Moong Dal in India
    Moong Dal is a good source of iron. It protects us from skin cancer. It is loaded with vitamins and protein. Green gram helps us to lose weight. And helps to control blood pressure also.
   Sprouted green gram is very rich in protein and vitamin C. But the vitamin C will be destroyed when it get heated.
   Pomegranate is also a very good source of iron. It increases the immunity power and control the blood pressure. It also helps to increase the hemoglobin level and is a good remedy for stomach problems and asthma. It is rich in vitamin C and Vitamin K. Pomegranate is the best remedy for bone related problems also.
   Moong Chaat  is really a North Indian recipe. But, I made little changes in this recipe and my family members like this very much. It is a salad which contains sprouted moong dal and pomegranate and is very healthier snack for elders as well as children.

MOONG CHAAT



INGREDIENTS

Sprouted Moong Dal ( green gram) - 2 cup
Pomegranate seeds  - 1 cup
Onion - 1 (chopped)
Green Chilly - 1 (chopped)
Tomato  - 2 (cubed)
Chaat Masala - 1/2 spoon
Aam choori ( Dried mango powder) - 1/4 teaspoon
Lemon juice - 1/4 teaspoon (optional)

METHOD 

   Mix sprouted green gram, onion, pomegranate, green chilly and tomato and refrigerate for half an hour. Mix lemon juice, chaat masala, dried mango powder and salt. Mix the lemon juicemix with the Moong Chaat at the time of serving. ( Steam green gram for 5 minutes if necessary.) Protein rich and tasty Moong chaat is ready. Serve immediately to avoid protein loss.

FISH FINGER


  

  Hai friends....


   Today's special item is a wonderful snack recipe, that is FISH FINGER. It is very easy to prepare and is very special snack for fish lovers. 



FISH FINGER

  We can prepare fish finger by various methods. I prepared it with using 4 methods. In my experience, Fish Finger is become more tasty when adding mint paste while marinating the fish.

The Recipe is below:

INGREDIENTS

Fish - 1 kg (cleaned and cut it into finger shape) (fillets)
Chilly Powder - 1 table spoon
Turmeric Powder - 1/4 teaspoon
Black Pepper Powder - 1 teaspoon
Mint (pasted) - 1 teaspoon
Egg White - 1
Corn Flour - 2 table spoon
Bread Crumbs - 2 tablespoon
Salt - to taste
Cooking Oil - for deep frying
Ginger- Garlic paste - 1 teaspoon

METHOD

   Mix corn flour, chilly powder, turmeric powder, black pepper powder, salt, ginger- garlic paste and mint paste in a bowl. Marinate cleaned and cut fish fillets with corn flour mixture and keep it aside for 30 minutes. Blend egg white in a bowl and keep it aside. Dip the marinated fish pieces into the egg white one by one and roll it in bread crumbs. Now our fish finger is ready to fry.

   Fry the both sides of the fish finger in hot oil in a pan and enjoy it with sauce.






How is this fish finger? 

Very easy to prepare and very tasty to eat. 

Mint leaves add a fragrance and special taste to our fish finger.

AVAL VILAYICHATHU/ AVAL VARATTIYATHU/ SWEETENED BEATEN RICE FLAKES IN JAGGERY

AVAL VILAYICHATHU

   Aval vilayichathu is a healthy snack familiar to all of us. It is very easy to make. Actually it is a keralite dish. Beaten Rice fried in ghee and mixed with jaggery, grated coconut, dal, cashews, fried coconut bits and raisins. it is very tasty and can store for 1 month






AVAL VILAYICHATHU


Recipe of Aval Vilayichathu;

INGREDIENTS

Aval (Poha) (Rice Flakes) - 2 cup
Jaggery - 1 cup
Coconut (grated) - 1 1/2 cup
Ghee - 1 table spoon
Raisins - 2 table spoon
Cashew Nuts - 2 table spoon
Roasted Gram Dal (Pottu Kadala) - 3 tablespoon
Coconut Bits - 2 table spoon
Cardamom Powder - 1/2 teaspoon
Dry Ginger Powder ( chukku podi) - 1/4 teaspoon
Black sesame seeds - 1 1/2 teaspoon (optional)

PREPARATION

    Fry Rice flakes in a hot pan and keep aside. Don't allow to change the color of the rice flakes. Take Jaggery in a vessel and add some water to dissolve Jaggery. Then melt Jaggerry to become thick. At the same time pour ghee in a hot pan. Roast Cashew nuts, raisins, roasted gram dal, sesame seeds ( optional) and coconut bits separately. Keep it aside

   Drain melted jaggery through a stainer to remove the impurities. Add melted Jaggery into the pan and add grated coconut to it. Cook it in low flame for some time. When it get semi dry consistency, add fried rice flakes ( aval) (poha) to it and stir well. Combine the mixture well. Then add roasted gram dal, cashew nuts, raisins, sesame seeds and  fried coconut bits to it and stir well. Add Cardamom powder and mix well. Cook for 2-3 minutes. Then remove from flame. Allow it to cool. Aval Vilayichathu/ Aval Varattiyathu is ready.
       
     

            Serve aval vilayichathu with banana.
                                                                          Enjoy...

   Put it in an airtight container. We can store this for 20 - 30 days when we store this in refrigerator.

BABY CORN FRY

BABY CORN FRY

 
   Baby Corn are most common in Asian cuisine. It is eaten both raw and cooked. Now I am presenting a tea time snack in front of you. Baby Corn Fry.

   Its very easy to make and tasty as well as healthy too.



BABY CORN FRY


Here is the recipe:

INGREDIENTS

Baby Corn - 200 gm
Ginger paste - 1 teaspoon
Garlic paste - 1 teaspoon
Red Chilli powder - 1/2 teaspoon
Corn flour - 2 tablespoon
Chat masala - 1/2 teaspoon
Maida/ Wheat Atta - 2 table spoon
Salt - to taste
Oil - for frying

 METHOD

   Boil Baby corn in steam for 5 minutes. Allow it to cool. Marinate Baby Corn with garlic paste, ginger paste, red chilli powder, chat masala, corn flour and salt. Add Maida/ Atta (Maida is very harmful to our body and digestive system. So I don't use maida in anyone of my recipes usually. I use Wheat Atta instead of maida) into it and combine well so as to mix the masala in each part of the baby corn.

   Heat oil in a pan and put Baby corn into the hot oil. Fry both sides and take from oil. Baby Corn Fry is ready now. Garnish it with Celery or Parcely. Serve hot with Sauce.

EGG CORN BALLS




    Today I m sharing a new snack named Egg Corn Balls. Its a compound of Sweet Corn, Bread and Egg. Actually this was an experiment and my family members like this. So I am sharing this recipe with you.




EGG CORN BALLS


INGREDIENTS

Sweet Corn - 1 cup
Bread - 3 slice
Onion - 1 (finely chopped)
Ginger - 1 piece (finely chopped)
Green Chilly - 1 (finely chopped)
Coriander Leaves (chopped) - 1 tablespoon
Corn Flour - 2 table spoon (fried)
Oats - 1 tablespoon (fried)
Dried Mango Powder - 1/2 teaspoon
Black Pepper Powder - 1/2 teaspoon
Salt - to taste
Peanut (fried and crushed) - 1 table spoon
Rusk Powder - a little
Egg - 1
Cooking Oil - to fry


PREPARATION


   Cook Sweet corn in steam for 8 min and keep aside. When it get cool put it in a grinder and make a rough paste. Crush the Bread by hand. Put Sweet Corn, Bread, Onion, Ginger, Green Chilly, Coriander leaves, Corn Flour, Oats, Dried Mango Powder, Black Pepper Powder, Peanut, Egg,Salt and some Rusk powder in a bowl and mix well.

   Take some compound in hand and make small lemon like balls and roll it in Rusk powder and put in boiling oil and fry both sides in golden color. Serve with Sauce.

PEPPER CORN (MALAYALAM & ENGLISH)

വളരെ എളുപ്പത്തിൽ തയ്യാറാക്കാവുന്ന ഒരു ആരോഗ്യപ്രദമായ വിഭവമാണ് ഇത്.
ആവശ്യമായ സാധനങ്ങൾ
സ്വീറ്റ് കോണ്‍ - 2 കപ്പ്‌
കുരുമുളക് പൊടി - 1 1/2 ടീസ്പൂണ്‍
മഞ്ഞൾപ്പൊടി - 1 ടീസ്പൂണ്‍
നാരങ്ങാനീര് - 1 ടേബിൾസ്പൂണ്‍
ഉപ്പ് - പാകത്തിന്
മല്ലിയില (അരിഞ്ഞത്) - 1 ടീസ്പൂണ്‍
പാചകരീതി
   സ്വീറ്റ്കോണ്‍ (ചോളം) മഞ്ഞൾപ്പൊടിയും ഉപ്പും ചേർത്ത് നന്നായി യോജിപ്പിക്കുക. അതിനുശേഷം ആവിയിൽ 15 മിനിറ്റു നേരം പുഴുങ്ങിയെടുക്കുക. ഇതിലേക്ക് കുരുമുളകുപൊടിയും നാരങ്ങാനീരും ചേർത്ത് നന്നായി ഇളക്കിയെടുക്കുക. മീതെ മല്ലിയില വിതറുക. ചൂടോടെ കഴിക്കാം.

PEPPER CORN 

INGREDIENTS

Pepper Powder - 1 1/2 teaspoon
Turmeric Powder - 1 teaspoon
Salt - to taste
Lemon Juice - 1 tablespoon
Coriander Leaves (chopped) - 1 teaspoon
PREPARATION
   Combine Sweet Corn, Turmeric powder and Salt and mix well. Steam cook the Corn in a steamer for about 15 minutes. Add pepper powder and Lemon juice and mix well. decorate with Coriander leaves. Serve hot.
