PANAM NONKU SARBATH / PALM FRUIT DRINK

Now I am sharing one of my favourite summer drinks with you. I like panam nonku  (palm fruit) very much. I had tasted this first when I was stayed in a hostel at Kollam. There I had a friend  Bobby from Tamilnadu. Her mother visited her at hostel and brought panam nonku several times. Now I am residing at Trivandrum and I got nonku sarbeth from several nonku stall (KELPALM Stall) here. Now I got some palm fruit here and tried to prepare nonku sarbeth and the taste is the same as I had from the stall. So I am sharing this recipe with you all.

PANAM NONKU SARBATH

INGREDIENTS


Panam Nonku / Palm fruit pulp - 2 cup
Pine apple  pieces - 1 cup
Banana pieces - 1 cup
Cardamom - 3
Sugar - as required


PREPARATION


   Blend all of the ingredients in a blender and pour it into a serving glass. Add ice cubes if needed. Enjoy...

MAMPAZHAM FALOODA / MANGO FALOODA

Today's special is a falooda recipe. During this Summer season I got a lot of ripe mango and I tried several new recipes with mango. This is also a special recipe and I served this falooda for my guests and all of them like this very much. Now I gladly sharing this recipe with you.



MANGO FALOODA


INGREDIENTS


Ripe mango - 3
Milk - 2 cup
Vermicelli - 1/2 cup
Fruits - 1 cup
Sugar - 1 cup
Vanilla Ice cream - 1 cup
Black kaskas - 2 tablespoon



METHOD


   Cut fruits into small pieces and keep refrigerating for 1 hour. Cook vermicelli with sugar and milk and keep in refrigerator to cool. Soak kaskas in water for 30 minutes. Take mango pulp and blend it with some milk, 2 scoop ice cream and sugar.


   Now set the faloodato serve. Take a long glass and put some pieces of fruits into it. Then add cooked vermicelli, then soaked kaskas and pour mango pulp over it. Finally top it up with scooped vanilla ice cream and cherries. Special Mango Falooda is ready to serve. Enjoy the authentic taste.

MAMPAZHA PAYASAM / RIPE MANGO KHEER

Hai friends, I am very glad today because this is my hundredth post of my blog. Thanks a lot for your support since you had given and expecting the same hereafter also. Now I am adding a delicious sweet recipe for you. During this Summer season, we get a lot of ripe mangoes. Today's special is a kheer recipe which is prepared with ripe mango and sago seeds.

MAMPAZHA PAYASAM


INGREDIENTS


Ripe mango - 4
Jaggery - 1/2 kg
Sago seeds - 1 cup
Ghee - 2 tablespoon
Coconut Milk - 1 cup (thick milk)
Coconut milk - (second consistency) - 1 cup
Raisins - 20
Cashew nuts - 15
Coconut bits - 2 tablespoon


PREPARATION

 
   Peel and cut mango into pieces and grind to make a smooth paste. Dissolve jaggery in some water and boil it. Drain it through in a sieve and keep aside. Soak sago seeds in water for 30 minutes and cook it well. Pour ghee in a hot pan and roast cashew nuts, raisins and coconut bits respectively. Keep it aside. Add ground mango paste to ghee and saute well. When it get sauteed, add jaggery  and second consistency coconut milk to it and stir occasionally. When it get thick, add cooked sago seeds and boil it. Then add thick coconut milk and boil the kheer. Then turn off the flame. Add cardamom powder, roasted cashew nuts, raisins and coconut bits and stir well. Delicious Mampazha Payasam is ready. MAMPAZHAM KESARI / MANGO KESARI / MANGO SEMOLINA PUDDING

Rava kesari is a famous South Indian sweet made for festive seasons like Diwali or Vishu, or special occasions. It is made with semolina, sugar, ghee and water. Color and flavours also added with this. But we can prepare kesari by adding no artificial color or any artificial flavours. I prepared Ripe Mango Kesari without adding any artificial color or anything.


Today I am presenting a my special recipe for you. This is Summer season and its easy to get lot of ripe mango. So try this easy recipe today itself.


RIPE MANGO KESARI

INGREDIENTS


Ripe Mango - 4
Rawa / Semolina - 2 cup
Sugar - as required
Ghee - 2 tablespoon
Cashew nuts - for garnishing
Raisins - 20
Cardamom - 3 (crushed)
Water - 3 1/2 cup



PREPARATION


 Roast semolina in a heavy bottomed pan. Turn off flame when the roasted aroma comes and keep the roasted semolina aside. Peel and cut mango into pieces and grind it to make a smooth pulp. Pour ghee to a heavy bottomed pan and roast cashew nuts and raisins. Keep it aside. Pour some water and sugar to the pan and boil it. Add one pinch salt to it. Stir well. Add mango pulp to the boiling water and stir well. Allow it to boil. When it get boiled, turn the flame low, and add the roasted semolina to it slowly and stir well. Add cashew nuts, raisins and crushed cardamom to it and stir continuously till the semolina mix get thicker. Turn off the flame and pour it to a ghee coated vessel and level the top of the mix with a laddle. Allow it to cool.

   Now tasty and mango flavoured kesari is ready.  Put the Kesari reverse to a plate. Cut it into pieces. Garnish it with cashew nuts. Serve and enjoy,,,

ADA PRATHAMAN

Friends, 

   Have a Sweet Morning

   Today I am telling about a delicious recipe which is very special to vegetarians. Everyone like Ada Prathaman in sadya. We can prepare this delicious item very easily.



ADA PRATHAMAN


   Ada Prathaman is a traditional Kerala delicacy consisting of rice ada which is made with rice flour in plantain leaf and cook in boiling water.  Prathaman is a sweet dish in the form of a thick liquid ; similar to the payasam, but with more variety in terms of ingredients and more elaborately made. It is made with jaggery and coconut milk. The main difference between Prathaman and Payasam is that, in prathaman we use coconut milk but in payasam we use cow's milk. In sadya, prathaman is  served as desserts after meals. See the recipe of delicious Ada Prathaman below :







INGREDIENTS

Ada - 500 g
Jaggery - 300 g
Ghee - 3 table spoon
Coconut bits - 1 cup
Coconut milk (first consistency milk)  - 21/2 cup (of 3coconuts)
Coconut milk (second consistency milk) - 3 cup
Coconut milk (third consistency milk) - 5 cup
Cashew Nuts - 100g
Raisins - 75g
Cardamom powder - 1 teaspoon
Dried ginger powder - 1 teaspoon

PREPARATION

   Powder jaggery and dissolve in some water. Boil this jaggery water and keep aside. When it get cool, pass the jaggery water through a sieve to drain the impurities from it. Boil some water in a vessel. Wash ada and add it to the boiling water. Add one teaspoon ghee into it. Cook ada for some time. Remove it from stove and drain the boiled water from it and wash the cooked ada in cold water to avoid sticking. Drain the water from ada and keep it aside. At the same time put a heavy bottomed vessel or uruli on stove and add some ghee into it. When it get hot, put coconut bits to it and fry it. Then add cashew nuts and raisins respectively. Fry them and keep it aside. Finally add cooked ada into vessel and saute well. Add boiled jaggery to the sauteed ada and stir well. Add the third consistency milk to it and stir again. Allow ada to cook well in jaggery. When it get thick, add the second consistency milk and cook. Stir occasionally. 


   The prathaman get cooked, add the first consistency milk and stir well. Allow the prathaman to boil. Then add the cardamom powder and dried ginger powder and mix well. Finally garnish the prathaman with cashew nuts, raisins and coconut bits.

Our traditional and tasty Ada Prathaman is ready to serve.


Try this recipe today itself and enjoy the awesome taste...


STEP BY STEP METHOD




1.Powder jaggery and dissolve in water.



2: Boil jaggery water and pass through a sieve to drain the impurities.





3 : Put ada in a vessel and wash it.




4. Boil water in a vessel. Add ada in boiling water and cook for some time.


5: Remove cooked ada from hot water. Pass cold water through cooked ada to avoid sticking each other. Drain the water from ada.




6. Pour ghee in a hot Uruli. Add coconut bits into it and fry.





7. Stir occasionally... Remove the fried coconut bits from Uruli.





8. Add cashew nuts to the ghee and stir. Add raisins also to this and stir occasionally.


9. Remove fried cashew nuts and raisins from uruli and add cooked ada into the Uruli and saute well.




10. Add jaggery into the Uruli and stir. Add third consistency milk and stir occasionally..

11. Add second consistency milk when the prathaman get thick.



12. Allow the ada to get cooked. Stir occasionally..



13. Add first consistency milk (thick milk) when the ada get cooked.




14. Stir occasionally. Allow the prathaman to get boiled.




15. Add cardamom powder and dried ginger powder to the cooked prathaman and mix well.



16. Add fried coconut bits, cashews and raisins to the prathaman and stir well.











17. Turn off the flame. Now delicious Ada Prathaman is ready to serve. Garnish it with fried coconuts and serve,,,,



18. Enjoy the traditional taste of Kerala

JAMUN ICE CREAM / JAMBUL BERRY ICE CREAM/ NJAVALPPAZHAM ICE CREAM



Jambul berry (Njaval Pazham)  is also known as JAMUN or Black Plum. It is a summer fruit with many health and medicinal benefits. Jamun is very effective against cancer, heart diseases, asthma and arthritis. It's seed is used as a medicine for diabetes.

   Jambul has many vital nutrients also. The iron content in this fruit is very high. So it is good to increase the haemoglobin count.


Today, we have to learn a heavenly taste of Jamun ice cream. Recipe is below:


JAMUN ICE CREAM





INGREDIENTS


Jambul berry ( Njaval pazham ) - 1 cup
Boiled Milk - 1 cup
Condensed Milk - 1 cup
Sugar - 3/4 cup
Fresh Cream - 1/4 cup
Cashew Nuts - 6
Raisins - 6-8
PREPARATION
   Wash and de seed jambul berry and blend it to make a pulp. Boil milk and allow it to cool. Then blend the jambul pulp and milk together. Then add sugar, and condensed milk. Blend it well. We get a thick solution. Finally add whipped cream and blend it and pour it into a container and keep 3 hours for refrigeration. After 3 hours blend the ice cream mix once again and keep it in refrigerator for 6 hours for setting. Tasty and healthy Jambul Berry Ice cream is ready. Scoop and garnish the ice cream with raisins and cashew nuts. Pour some melted chocolate on top of the ice cream. Serve immediately and enjoy a special taste..

PALADA PRATHAMAN / COOKED RICE FLAKES IN MILK/ PALADA KHEER

   Thanking all of you for your support. Today I m very glad to inform you my gratitude towards you because I got 1000 above page views for my blog within a short period.

   Now I am adding a traditional recipe of Palada Payasam for this pleasant occasion.

   Kheer is prepared in festivals and all special occasions. Palada Payasam is a South Asian rice pudding made by cooking rice ada in milk and sugar. It is usually prepared in festival season.


PALADA PRATHAMAN

   INGREDIENTS


RICE ADA ( Rice flakes) - 200 gm
Milk - 1 1/2 litre
Sugar - 1 cup ( as required)
Cardamom Powder - 1/4 teaspoon
Ghee - 2 tablespoon
Cashew nuts - 50 gm
Raisins - 50 gm


PREPARATION


   Wash rice ada and drain all water. Boil 2 cup water in a pan. When it get boiled, add ada into it. Turn off the flame and keep it in the stove for 20 minutes. Drain the water from ada after 20 minutes and rinse ada in cold water. Keep it aside. Boil milk in a vessel and keep it aside. Heat a heavy bottomed vessel and pour ghee in it. Add Cashew nuts, and raisins respectively and roast it and keep it aside. Add sugar to the ghee and saute well. When it get melted add Ada and roast it. 

   Add boiled milk into the ada mix and stir well. Boil the mix in medium flame. Stir occasionally. Continue boiling till the payasam get right thick consistency. Add cardamom powder and stir well. And finally add roasted cashew nuts and raisins and stir again. Yummy Palada Prathaman is ready. Serve hot and enjoy...

FIG HONEY ICE CREAM

HAVE A SWEET DAY

   Ice Cream is actually a frozen food, typically eaten as a dessert, usually made from diary products such as milk and cream, and often combined with fruits or other ingredients and flavours. It is typically sweetened with cane sugar or beet sugar or other sweeteners. But here I am presenting a marvelous ice cream recipe that a perfect blend of dried Fig, Milk and Honey.



FIG HONEY ICE CREAM


 INGREDIENTS

Fig - 12
Condensed Milk - 1 cup
Milk - 2 cup
Honey - 10 table spoon
Fresh cream - 1/4 cup
Cashew nuts - 6
Cherry - for decoration

PREPARATION

   Boil milk in a vessel and keep it aside to cool. Soak fig in boiled water for 3- 4 hours. Blend the soaked fig to make a smooth paste. Add condensed milk and boiled milk and blend it well. Finally add fresh cream and honey to it and blend again. Then pour the mixture in a container and keep it in refrigerator for 4 hours. After 4 hours take out the mixture and blend again to make a smooth paste. Again pour the mixture into the container and allow it for setting. The ice cream will set within 5 hours.

   Scoop the ice cream into a bowl and garnish it with fig pieces, cashew nuts and cherry. Pour honey over it. Our tasty FIG HONEY ICE CREAM is ready. Enjoy the yummy ice cream with a sweeet smile.
