IRUMPANPULI ACHAR / BILIMBI PICKLE

Bilimbi is very familiar to Malayalees and have a lot of health benefits. But excessive use of bilimbi is not good for health because there are some side effects too. What ever it may be it is commonly used among Keralites as a tasty pickle with hot rice. Here I am adding a simple recipe of bilimbi pickle. 



BILIMBI PICKLE


INGREDIENTS


Irumpan puli / Bilimbi - 3 cup (cut it into small pieces)
Chilli powder - 3 1/2 teaspoon
Fenugreek powder - 1/2 teaspoon
Asafoetida powder - 1/2 teaspoon
Gingelly oil - as required
Mustard seeds - 1 teaspoon
Salt - to taste


METHOD


   In a hot pan, pour gingelly oil and boil it. Add mustard seeds and allow it to splutter. Then turn the flame to low and add chilli powder, fenugreek powder and salt. Saute for one minute. Then add Bilimbi pieces and asafoetida powder to it and mix well. Turn off the flame. Don't cook the bilimbi pieces. Allow the pickle to cool and store it in an airtight glass jar.

NELLIKKA EENTHAPPAZHAM ACHAR / GOOSEBERRY DATES PICKLE

HAI FRIENDS....


 Today I am adding a special pickle recipe for you... I prepared this pickle the last week, and all of us like its special taste. Its very easy and try this recipe and share your opinion.



GOOSEBERRY DATES PICKLE

INGREDIENTS


Gooseberry - 10 (big)
Dates - 8
Green chilly - 3
Chilli powder - 1 teaspoon
Ginger - 1 piece
Garlic - 6 cloves
Curry leaves - 2 springs
Mustard seeds - 1/2 teaspoon
Turmeric powder - 1/4 teaspoon
Fenugreek powder - 1/4 teaspoon
Asafoetida powder - 1/4 teaspoon
Salt -to taste
Gingelly oil - 2 spoon
Vinegar - 1/2 teaspoon


METHOD


   Soak dates in water for 10 minutes. Boil water in a steamer and steam gooseberry with salt for 5 minutes. Cut it into pieces and keep aside. Remove the seeds from dates and keep aside. Chop ginger, garlic and green chillies. Boil gingelly oil in a pan and add mustard seeds and curry leaves to it and allow it to splutter. Add chopped garlic, ginger and green chilli to it and saute well. Grind 3 dates, chilli powder, fenugreek powder, turmeric powder and vinegar to make a smooth paste. Add this paste to the pan and saute for 2-3 minutes. Then add some salt. Finally add chopped gooseberry and dates pieces and asafoetida powder to it and mix well. Cook in low flame for one minute more. Tasty gooseberry dates pickle is ready. Enjoy,,,

CHEMMEEN ACHAR / PRAWNS PICKLE

Wow! Today I am adding my favourite Chemmeen achar recipe for you.. A bowl ofplain white rice could not tastier than how they taste with prawns pickle. A lot of my viewers requested me to post the recipe of prawns achaar, since my friends had tasted my prawns pickle and they all like it. Now I am adding it here. The photo is bit older and I will add the step by step photos shortly.


PRAWNS PICKLE


 INGREDIENTS


Prawns - 1 kg
Chilli powder - 4 teaspoon
Turmeric powder - 1/2 teaspoon
Ginger - 1 piece
Garlic - 2 pod
Green chilli - 4
Fenugreek - 1 teaspoon
Mustard seeds - 1 teaspoon
Vinegar - 2 table spoon
Asafoetida - 1 teaspoon
Curry leaves - 2 springs
Dried chilli - 2
Cooking oil - as needed
Salt - to taste

PREPARATION

   Clean and wash prawns well and keep aside. Marinate prawns with chilli powder, turmeric powder and salt for half an hour. Crush ginger and garlic and keep aside. Chop green chilli. Pour oil into a hot pan and fry the marinated prawns. Keep this aside. Splutter mustard seeds, fenugreek seeds, dried chilli and curry leaves in the same oil. Then add crushed ginger and garlic and chopped green chillies and saute well till the raw smell disappears. Add chilli powder and asafoetida powder to it and stir well. Add fried prawns, salt and vinegar and mix well. Boil the pickle and turn off the flame when it get thick. Allow it to cool and store it in an airtight container. Tasty and yummy prawns pickle is ready. Enjoy....

VELLA NARANGA CURRY / WHITE LEMON CURRY / LEMON PICKLE (WHITE)

Vella naranga pickle is a traditional recipe which I got from my mother's kitchen. She makes two different types of white lemon pickles and one among them is make with curry lemon and its name is white lemon curry and the other is with small lemon. Here I am adding the recipe of lime pickle which is making with curry lemon and it is slightly yellowish in color.




WHITE LEMON PICKLE

INGREDIENTS


Curry Lemon - 1 (medium size)
Green chilli - 3
Garlic - 10
Ginger - 1 inch piece
Curry leaves - 2 springs
Gingelly oil - 2 table spoon
Mustard seeds - 1 teaspoon
Fenugreek powder - 1/4 teaspoon
Asafoetida powder - 1/4 teaspoon
Salt - to taste


PREPARATION

 Cut lemon into small cube shaped pieces and mix it with salt and keep aside for 20-30 minutes. Pour gingelly oil in a hot pan and add mustard seeds. Allow it to splutter. Then add chopped green chillies, chopped ginger and chopped garlic to it and saute well. Then add curry leaves.  Add 2 table spoon water and salt to it when ginger and garlic get sauteed and allow it to boil. Now add fenugreek powder and asafoetida powder and mix well. Turn off the flame and add lemon pieces after 3 minutes. Pour the pickle into an airtight glass jar when it get cool.

PAAVAKKA ACHAAR / BITTER GOURD PICKLE

Today I am presenting a pickle recipe. We can pickle bitter gourd without bitterness by adding jaggery while preparing. See the special bitter gourd pickle and enjoy the special taste,



BITTER GOURD PICKLE

INGREDIENTS
Bitter gourd - 4
Mustard seeds - 1 teaspoon
Ginger ( chopped) - 1 tablespoon
Garlic - 10 cloves
Green chilly - 4
Fenugreek powder - 1/4 teaspoon
Cumin powder - 1/4 teaspoon
Asafoetida powder - 1/4 teaspoon
Tamarind juice - 1 teaspoon
Chilli powder - 1 tablespoon
Jaggery - 2 piece
Salt - to taste
Gingelly oil - as required
PREPARATION
   Cut bitter gourd into small pieces. Fry it in gingelly oil till it get golden color and keep aside. Splutter mustard seeds and add crushed ginger, garlic and green chillies and saute well. When it turned brown, add fenugreek powder, cumin powder and asafoetida powder and stir well. Then add tamarind juice and boil it. Add chilli powder and mix well. Finally add fried bitter gourd, salt and jaggery and mix well. Turn off the flame.  Bitter gourd pickle is ready. Enjoy..

BEEF PICKLE

Now a days BEEF PICKLE is one of the delicious and popular Indian recipe as a pickle.  Actually pickling is a process of preserving of food by either anaerobic fermentation in brine or immersion in vinegar.  We can pickle vegetables as well as non vegetarian food like beef, prawns, fish etc. Beef pickle is very hot and spicy. 



BEEF PICKLE

INGREDIENTS
Beef - 1 Kg
Garlic - 25 cloves (chopped)
Ginger - 2 inch piece ( chopped)
Green chilli - 5 (chopped)
Black pepper - 1 tablespoon (crushed)
Fenugreek seeds - 1/2 teaspoon
Kashmiri chilli powder - 3 tablespoon
Garam masala - 1/2 teaspoon
Vinegar - 3 tablespoon
Curry leaves - 3 springs
Cooking oil - as required
Salt - to taste
FOR MARINATION
Ginger garlic paste - 2 table spoon
Turmeric Powder - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Salt - to taste
PREPARATION
   Clean and Cut beef into small pieces. Mix ginger garlic paste, turmeric powder, garam masala and salt and make a paste. Marinate beef with the mix and keep aside for 30 minutes. Cook marinated beef with some water in a pressure cooker in medium flame. Drain the cooked beef and set aside. Keep the stock aside.

   Heat oil in a heavy bottomed pan and fry the cooked beef pieces till brown and keep aside. Heat oil in the same pan and add mustard seeds and fenugreek seeds. When it splutter, add chopped garlic, ginger, green chillies and curry leaves and fry them till the raw smell disappears. Put kashmiri chilli powder and garam masala with some water and put it to the pan and saute for few seconds. Add vinegar and beef stock to the masala mix and allow it to boil. Then add the fried beef pieces and mix well. Then check the salt. Add crushed black pepper seeds and stir well tilll the gravy get thick. Turn off the flame and allow it to cool.  Beef pickle is ready. Transfer the pickle into a glass jar. Enjoy....


STEP BY STEP METHOD

1. Clean and cut beef into small pieces and marinate with ginger-garlic paste, turmeric powder, garam masala and salt for 30 minutes. Then cook the marinated beef  with some water in a cooker. Drain the cooked beef and keep the stock aside.



2. Heat oil in a heavy bottomed pan


3. Fry the cooked beef pieces till it get brown




4. Heat oil in the same pan and add mustard seeds and fenugreek seeds and allow it to splutter


5. Then add chopped garlic, ginger, green chillis and curry leaves to it and saute well.


6. Fry them until the raw smell disappears


7. Add kashmiri chilly powder and garam masala and saute for few seconds

8. Add vinegar and beef stock and allow it to boil.


9. Add fried beef pieces to it and stir well. Check the salt.


10. Add crushed black pepper and mix well. Then stir the pickle well until the gravy get thick.



11. Turn off the flame and allow the pickle to get cool.



12. Delicious beef pickle is ready. Transfer it into a glass jar.. Enjoy..
